Pasta al Pesto is a traditional Italian dish from the Ligurian region, known for its aromatic basil sauce made with fresh, high-quality ingredients. Ingredients

  • 500g (14 oz) pasta (trofie, linguine, or spaghetti)
  • 100g (3.5z) fresh italian pesto sauce
  • 1/3 cup pine nuts, lightly toasted (Optional)
  • 2 garlic cloves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra-virgin olive oil
  • Salt to taste

Instructions

1. Cook the pasta

  • Bring a pot of water to a boil, add a generous pinch of salt, and cook the pasta for around 9 minutes.

 

2. Prepare the sauce

  • While the pasta cooks, place the pesto in a large serving bowl. If desired, add a spoonful of the pasta cooking water to loosen the pesto and make it creamier.

 

3. Combine and serve

  • Drain the pasta, reserving a small cup of the cooking water. Toss the pasta with the pesto until evenly coated, adding a bit of the reserved water if needed.

 

4. Finish with Parmigiano Reggiano

  • Sprinkle generously with grated Parmigiano Reggiano before serving.
