Ingredients
- 500g (14 oz) pasta (trofie, linguine, or spaghetti)
- 100g (3.5z) fresh italian pesto sauce
- 1/3 cup pine nuts, lightly toasted (Optional)
- 2 garlic cloves
- 1/2 cup grated Parmesan cheese
- 1/2 cup extra-virgin olive oil
- Salt to taste
Instructions
1. Cook the pasta
- Bring a pot of water to a boil, add a generous pinch of salt, and cook the pasta for around 9 minutes.
2. Prepare the sauce
- While the pasta cooks, place the pesto in a large serving bowl. If desired, add a spoonful of the pasta cooking water to loosen the pesto and make it creamier.
3. Combine and serve
- Drain the pasta, reserving a small cup of the cooking water. Toss the pasta with the pesto until evenly coated, adding a bit of the reserved water if needed.
4. Finish with Parmigiano Reggiano
- Sprinkle generously with grated Parmigiano Reggiano before serving.
